Owner & Managing Partner
Delmonico's Restaurant Group
Dennis Turcinovic learned the in's and outs of the hospitality industry at an early age. Inspired by his father's passion and success as a restaurateur, Dennis spent each weekend from the time he was seven years old at his family's restaurant, rolling up his sleeves wherever he was needed. Today, at age 34, Dennis is spearheading the expansion of the Delmonico's dynasty as Owner and Managing Partner of Delmonico's Restaurant Group.
Over the years, Dennis sunk his teeth into all aspects of the restaurant business, working his way from the kitchen to the front of the house until finally being appointed General Manager of Delmonico's Restaurant in 1998. A short time later in 2001, Dennis became Managing Partner of Delmonico's and the driving force behind its renaissance, reestablishing the landmark restaurant's prominence in the culinary arena and successfully evolving the iconic brand while preserving its historic roots.
Dennis manifested his vision for the Delmonico's empire by creating Delmonico's Restaurant Group in 2012. In addition to Delmonico's flagship location in downtown Manhattan, the restaurant collection includes the newly-opened Delmonico's Kitchen – a chic, Midtown eatery that offers a modern twist on Delmonico's original menu – and Delmonico's 1837, slated to open in Southampton, Long Island in Spring 2013.
Drawing upon his keen knowledge of food safety and passion for fine cuisine, Dennis further expanded the Delmonico's brand with the launch of Delmonico's Distribution, thrusting Delmonico's renowned gourmet sauces into the retail market. With Dennis at the helm, plans for global expansion are underway for Delmonico's Restaurant Group as it continues to redefine the standard of epicurean excellence.
A dedicated foodie and wine enthusiast, Dennis frequently travels throughout the United States, Europe, and South America in search of inspiring new culinary experiences. His particular enthusiasm for the wines of California is reflected in Delmonico's award-winning wine list, which features several labels from Dennis's personal cellar.
In addition to being a fine-dining connoisseur, Dennis also runs his own film, television and gaming production company called The Electric Elephant.

Executive Chef Billy Oliva's love of the culinary arts began in childhood. At the age of 12, Billy took his first restaurant job at Fraunces Tavern under Chef Guy Gautier, just blocks away from Delmonico's flagship restaurant in New York's Financial District. Today, as the Executive Chef of Delmonico's Restaurant Group, Chef Billy brings a globally inspired, seasonal approach to Delmonico's legendary cuisine – the United States' first fine-dining restaurant, and the birthplace of the Delmonico's Steak, Baked Alaska, Eggs Benedict and Lobster Newburg, to name a few.
A graduate of the Culinary Institute of America, Chef Billy worked in kitchens, cafés and taverns throughout the United States and Europe over the years, studying under culinary legends such as former Tao chef, Sam Hazen. Chef Billy pursued his passion through London, Seville and Southern Italy, where he encountered new flavors and techniques that helped shape his culinary path. Upon making his way to West Cork, Ireland, Chef Billy took over The Baltimore Customs House, where his tasting menus earned the Michelin Bib Gourmand.
Fusing modern influences and traditional techniques, with an emphasis on fresh, local and organic ingredients, Chef Billy breathes new life into Delmonico's signature dishes, while preserving the restaurant's iconic history and original standards.
Chef Billy was instrumental in defining the culinary direction of Delmonico's new sister restaurant, Delmonico's Kitchen, which launched in November of 2012 in Midtown Manhattan. "DK" as it is so nicknamed, offers a contemporary twist on Delmonico's flagship menu in a chic and lively setting. Chef Billy's culinary vision will also play a vital role in the launch of Delmonico's 1837, slated to open in Spring 2013 in Southampton, Long Island.
Chef Billy's career has been recognized by CNN, The New York Times, ABC's The Chew, History Channel, The Wall Street Journal, The New York Post, Martha Stewart Radio, Good Day New York, FOX News and Food Network's Throwdown with Bobby Flay.
Director of Operations
Delmonico's Restaurant Group
Nicolas Geeraerts, Director of Operations for Delmonico's Restaurant Group, learned the nuances of the hospitality business as a youngster working in his family's restaurant in Belgium. At just sixteen years old, Nicolas and his mother successfully launched Belgium's first steakhouse, The Angus Beefeater, which Nicolas helped run for several years thereafter. Upon graduating from the University VUB in Brussels, Nicolas traveled to Spain where he gained experience working at fine-dining establishments throughout Alicante, Valencia and Barcelona.
In 2004, Nicolas moved to Manhattan to further pursue his career in hospitality. Nicolas worked with renowned New York City restaurants such as Brasserie and Jean Georges, until being appointed as General Manager of Chef Todd English's Olives at the W Hotel in 2008. Over the next several years, Nicolas worked closely with Chef Todd English, playing a pivotal role in the operation of several of his highly esteemed restaurants.
Nicolas's European refinement, passion for the hospitality industry and flair for venue creation later caught the attention of veteran restaurateur Tony May, for whom he coordinated the design, construction, branding and launch of SD26 Restaurant and WineBar, a 16,000 sq. ft., three-level fine-dining restaurant in Manhattan.
Nicolas joined Delmonico's Restaurant Group in October 2012 as Director of Operations, where he oversees day-to-day operations at Delmonico's flagship downtown location and Delmonico's Kitchen in Midtown Manhattan. Nicolas's far-reaching experience and comprehensive knowledge of the restaurant and hospitality industry will prove instrumental in the launch of Delmonico's 1837 Southampton, slated to open in Spring 2013.
